Directions:

  1. Preheat the oven to 350° F.
  2. Stir together flour, ginger, cinnamon, cloves, baking soda and pepper in a medium bowl.
  3. Place butter, sugar and brown sugar in a large mixer bowl. Beat at medium speed, scraping the bowl often, until creamy. Add egg and molasses; beat until well mixed. Reduce speed to low. Add flour mixture; beat until well mixed.
  4. Shape dough into 3/4-inch balls. Place 2 inches apart on ungreased cookie sheets. Bake for 8 to10 minutes or until lightly browned. Cool completely.
  5. Place 1/2 teaspoonful of jam in the center of the flat side of one cookie; top with a second cookie, flat side down. Press together lightly. Repeat with the remaining cookies.
