Ingredients:

  • Papaya Salsa (recipe follows)

Directions:

  1. Mix chipotle powder, paprika, cilantro, thyme, lime juice, orange rind and oil in blender or food processor.
  2. Stud pork with garlic; coat with rub. Grill to internal temperature of 160° F. Let stand 5 minutes.
  3. Slice on diagonal and serve with salsa.

    Papaya SalsaIngredients:

    • 1 1/2 cups jalapeño pepper jelly

Directions:

  1. Heat jelly until melted. Off heat, mix in remaining ingredients. Let stand 1 hour.
  2. Servings: 6 cups
