Franklin's Homewood Gourmet Roast Pork Loin with Ginger Peach Chutney

Ingredients:

  • Seasoning mix of salt, pepper, Mrs. Dash (to taste)
  • Ginger Peach Chutney (recipe below)

Directions:

  1. Clean the silver skin and or fat that is usually on the loin. Season with the seasoning mix. Roast in a hot oven (425°s; F) for 15 minutes, turn down oven to 375° F and roast for 20 minutes more, until the internal temperature is 140° F.
  2. Allow to rest for 10 minutes before slicing, if serving warm, allow to cool and refrigerate if serving warm. Serve garnished with the ginger peach chutney.
  3. Ginger Peach Chutney Ingredients:

    • 2 peaches, peeled and diced

Directions:

  1. Mix all ingredients and allow to marinate overnight in the refrigerator. The chutney can be made spicy with the addition of either sauce or jalapeños.
