Ingredients:

  • 1 lrg green bell pepper, diced
  • 1 lrg red bell pepper diced
  • 2 Tbsp minced garlic
  • 28 oz diced tomatoes with juice
  • 1 lbs. honeybaked ham, diced
  • 1/2 measuring cup dry white wine
  • 1 tsp basil
  • 1/2 tsp mexican oregano
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 3/4 measuring cup long-grain white rice

Directions:

  1. In a Dutch oven, over medium heat, heat oil and saut? onions and peppers about 10 minutes until softened.
  2. Add garlic and saut? an additional one to two minutes. Add tomatoes, HoneyBaked Ham, wine, basil, oregano, paprika, and cayenne pepper. Bring to boil, and add rice slowly, stirring to combine.
  3. Cover and reduce heat to low. Simmer about 30 minutes, stirring occasionally, until rice is tender.
