This is just one of over 9,000 recipes we've collected since early 1996. Many of these recipes have been passed down from family member to family member and then shared with friends and then, with Mike Pitzer's Secret Recipes. When it comes to recipes, the real secret is that all of our recipes always have been, and always will be free!

Ingredients:

Directions:

  1. The night before, wash beans and place in large kettle. Add water to half-filled kettle.
  2. Next morning, bring beans and water to boiling over medium heat, stirring to keep from burning. Reduce heat to simmer and cook 5 hours, uncovered, letting beans "pack" (cook together) but adding boiling water as necessary to keep beans covered.
  3. After first hour, add ham or salt pork.
  4. After second hour, add garlic.
  5. After third hour, add oregano, cumin and chiles.
  6. After fourth hour, add lemon juice or salt. Beans will be ready to serve after fifth hour.
  7. Servings: 10 to 12
